Coffee Meringue
It seems the more i try to stay away from sweets, the more sweet gifts i receive!!
Yesterday morning i got a packet of freshly baked meringues from a colleague's wife...was delicious!!
And just when my energy levels started playing hide and seek, i received a Bar-One chocolate for my 25 hour day!
what a good day at work!!!
Here is a Meringue recipe i stumbled upon. I haven't tried it myself YET, but it looks and sounds YUM.
As for me..i like anything coffee-flavoured!! Lemme know how it went and send in some pics!!! :)
Mocha Meringues
3 large egg whites
180g caster sugar
1 teaspoon cornflour
½ teaspoon white vinegar
½ teaspoon vanilla extract
2 tablespoons cocoa powder
3 teaspoons ground coffee
80g dark chocolate
- Preheat the oven to 130°C/266F. Line two baking trays with non-stick baking paper.
- In a large bowl, whisk the egg whites until soft peaks form. While continuously whisking, add the sugar one tablespoon at a time until stiff and satiny shiny. Whisk in the vanilla, cornflour, white vinegar, cocoa powder and two teaspoons of the coffee until combined.
- Using a piping bag and a 1cm plain nozzle, pipe 60 small blobs onto the prepared trays around 2.5cm in diameter and 4cm apart.
- Bake for 25 minutes. Turn the oven off and with the door slightly ajar, allow the meringues to cool completely.
- Melt the chocolate and the remaining coffee in a bowl set over saucepan of simmering water. Allow to cool, then use to sandwich the meringue bases together.
** if you don't like coffee flavoured meringues leave out the cacao and coffee!
** or add variation with strawberries or lime or apple or anything you fancy!

It's all about the money...NOT!
Like Jewel sings in her song of about 10 years ago. "It's all about the money, It's all 'bout the dum dum d d d dum" and THAT's why i'm still doing my dayjob. That's why most of us are still working 8-5 or 7-6 (like me).
i say :
It's all about following your dreams!
Ive decided to wave my dayjob goodbye..BUT only when I have another job/income. This motivated me to start working on ideas and a business plan. I know it's going to be a while before I can actually do it, but it's okay!!! At least I'm trying!!! :)
YEAH!!!
Food has been on my mind so much lately..could be because i'm on a "healthy-eating-mission"
Believe it or not...I said NO to KFC yesterday. RESPECT \m/

Chewy Tuesday
Have you made you own pizza bases? Just try it! It tastes MUCH MUCH better than those you buy in die shop! AND you can get double the pizza base for half the price.

Buy 1kg of ready made dough. Break the dough in 8 equal sized balls. then roll it out on a floured counter/table. let it stand and rise while you wait for the oven to reach 180 Celsius. before you put it in the oven, roll it out again. prick the dough with a fork and bake it for about 3 - 5 minutes. Let it cool , package and freeze. Dont worry about making perfect round pizza bases! who ever said it should be round? it looks much more cosy and homely if its just rolled out roughly!

I made this YUMMY Garlic pita too! A bit of olive oil, lots of garlic and spices. it all you need!

Chewy Tuesday
Today is CHEWY TUESDAY!!!
LUNCH. It was one of my colleague's Bday yesterday at the office and this was our treat!

Boerewors (boar-er-vorsh) Rolls with Mrs. Balls Chutney!
Boerewors Rolls are hot dog buns filled with a minced beef cured sausage, usually topped with a sauce of your choice. May it be Chutney, Tomato Sauce, Musterd, or SMOOR. Smoor is onion an tomato finely chopped with spices, vinegar and mustard cooked together.
sooooo YUMMMMMMM!!!
And this brings me to our Proudly South African Braaiing! A bit more primitive than America's Barbeque. We braai on the ground, on rocks, in a braai built with bricks or anything you like!


We use REAL wood and go nowhere without our 'BRAAISOUT' and most of the time we eat the meat from the coals, no dishes! what a bargain! :D
We also make tasty braaibroodjies, onions and sweet potatoes in foil, but THAT will be a story for another Chewy Tuesday!

Going nutssss
This weekend I was introduced to Pecan harvesting. My gran has a Pecan Nut tree in her garden. Little did we know we MUST NOT pick them, we should shake the tree and collect the nuts from the ground!
So the verdict was a big bowl FULL OF GREEN and YUKKY nuts...haha, not so clever

Iced Zoo Cookies
Don't you just LUUUUUUUUUUVVVVVVVVVVV Zoo Cookies?
Proudly South African!!
We used to lick of the white animal, then eat of the biscuit sides and try to eat of the back of the biscuit. The coloured icing was the best and last part we ate. it was so much fun!!! Sticky fingers, sticky face, haha!!
Even thought the Zoo Cookies aren't the same as it were 20 years ago( but then, what is?), it still tastes the same!!!
ooooooh, i just luv these!!!
